Beach foodie: the energy of “fun foods”

IMG_20160331_144909310_HDRIMG_20160331_144922468Magical Monday to you! I feel new moon has begun for me a little early this week. I have felt creative energy flowing through me. In my first photos, this week I introduce “fluffbutter”. The flavor of this packet is “maple icing”. I’ve been experimenting with foods that travel well and provide great nutrition. This packet of fluffbutter has 11 gms of protein, almost no sugar, and very few carbs. It has a great taste and pairs well with veggies. IMG_20160404_132531IMG_20160404_132753324In my second set of photos, I introduce peanut butter and jelly “spaghetti”. I prepared the vegan, low calorie “spaghetti” and added 1 tablespoon organic “Pacific Beach” peanut butter and one half tablespoon “Jackie’s Jam”. It was 120 calories total. The peanut buter is made in California from organic Valencia peanuts, prepared in small batches. The only ingredient is the peanuts and salt. Jackie’s Jams are from El Cajon. This pasta dish actually tasted like peanut butter and jelly, very low carb, very low sugar. Some variations would be to use raw almond butter and a few fresh organic strawberries or blueberries instead of the jam.
So this week I invite you to use the energy of the new moon to create some new “fun foods” of your own, fluffbutter, or even peanut butter and jelly “pasta”.
